Instant Dal tukdi curry (urad daal recipe)

When we cook Whole black gram lentil(khadi urad dal) ,it takes extra time for soaking and boiling. 
To make this process simple I make dal tukdi and keep it ready to make instant curry whenever needed.



Ingredients:
1 cup dal tukdi ,  please click on below image to see how to make daal tukdi.










1 medium size tomato
1/4 cup chopped coriander leaves
5 to 6 garlic cloves
2 tsp coriander powder
2 tsp cumin powder
1 tsp turmeric powder
1 tsp chilly powder
Salt to taste
1 tsp cumin seeds (jeera)
1 tsp mustard seeds (raai)
1/4 tsp asafetida (heeng)
1 red chilly(optional)
1 bay leaf (optional)
1 start anise (optional)
1 tbsp oil
3 to 4 cups of water(+ as required)

Method:
1. Grind tomato,coriander leaves,garlic to fine paste.Keep it aside.


2. Heat a pan,add asafetida (heeng) .Then add cumin seeds and mustard seeds.When seeds crackle add red chilly,bay leaf,start anise.Saute for 10 to 20 sec.

3.  Add tomato paste and salt, cook well  for 10 min on medium flame. You can close the lid while cooking tomato puree.

 4. Add turmeric,cumin powder,red chilly powder and coriander powder.Cook until oil separates (about 3 to 4 min).
 5. Then add daal tukdi and water to the greavy.Cover with lid and let it cook for 10 to 15 min until daal get softer.


6.  Serve with rice or chapati.

Apple Pie with crumble topping


Have those bread slices left over,want to impress your guest/family ,try this yummiest pie recipe which is very easy to make and so delicious.
5 years ago found something similar from Sanjeev Kapoor in youtube .It was so tempting and easy to make,I tried it without giving second thought.Made it with the ingredients available at home and it came out so yummy.After then it was always a great hit among guests, potlucks and parties.When I moved India,this is the thing my Minneapolis friends missed a lot.
This recipe is dedicated to my friends who loved it so much.





 Ingredients:

8 to 10 bread slices (White/wheat bread) I like to use wheat bread. 
2 Apples (cut into long pieces) 
3 tbsp butter 
5 tbsp of Sugar (add little more or less according to taste)
half cup of Almonds

Method:

1. Preheat oven at 200 C.
2. Remove brown crust from bread slices ,cut them into small pieces and grind them in mixer to make fresh breadcrumbs.


2.  Grind Almonds,they should be finely chopped not powder.Keep them aside.
3.  Take half of the breadcrumbs (around 1 cup)  , 2 tbsp of butter(at room temperature) ,2 tbsp Sugar and mix them to make soft dough (use little milk if needed).



4. Take baking pan grease with oil/butter.
5. Now keep dough in middle n start pressing with fingers to cover pan.


6. Keep pan in oven and bake for 15 min  at 200 C.It should be golden brown.Its a thin layer so keep on checking,should not burn. Once you see golden layer out take pan immediately from oven and keep aside.This is outer crust.
7. Take a pan add apple slices and 2 tbsp sugar/honey (as per your choice).If required add little water/orange juice.
8. Cook for 5 to 10 min(stir occasionally) until apple slices are soft and tender.
9. Now keep cooked apples over baked crust.

 10. Now in a bowl mix remaining breadcrumbs(1 cup),1 tbsp sugar,1 tbsp butter,and chopped almonds, rub this mixture with fingers to form crumbs. Sprinkle Crumble all over the  apples. Using flat of your hands,press crumble firmly all over to make it crisper.
  


11. Now bake this pie at 200 C for 5 to 10 min in preheated oven until topping golden brown and crisp.
12. Your delicious apple pie is ready.Let it cool for some time,then serve hot.


Note: You can line baking pan with parchment paper/baking foil for easy removal.Below is the image with foil lining.

dal tukdi

Inspired by baby food ' Homemade cereal '.
 My hubby loves dal makhani (black urad dal),but it takes lot of preparation,soaking, boiling then frying.One day when I was making moong dal cereal for my baby thought of making some whole urad dal cereals too .Then I cooked them in tomato gravy which came out too good and  liked by everyone at home.
 It doesn't taste like dal makhni but you will get one more variety which is tasty as well easy to make.
For vegetarians  daal/beans are must to include in meals to get protein rich diet. If you are looking for some change try this recipe.Keep this dal tukdi in your  kitchen,use it whenever needed.


Ingredients:
1 cup urad dal(whole black gram)
1 tsp ghee

Method :

1. Wash dal and let it dry completely.
 2. Heat a pan,add little ghee ,then dal . Roast dal on medium/low flame for 3 to 4 min.Stir continuously.

3. Once its roasted,let it cool then Grind it coarsely. Don't make fine powder.

4. Store  in air tight container.

Instant khichdi using daal,rice cereal for your little one


Instant Khichdi using homemade daal rice cereal.
I started giving this khichdi when my little one was 8 month old.Its easy to make and you don't need to mash or grind to feed your baby.
Add veggies which your baby likes.If you have not started giving veggies then make it without veggies. After it gets cooked, it will become 3 times in volume so take smaller quantity.
Spices: I avoid red or green chilly,instead I use black pepper powder. Cumin powder and turmeric is good to include in baby food.

Ingredients:
1/2 cup daal,rice cereal
2 cups water+ as needed
1 tsp finely chopped tomato
1 tsp finely chopped spinach
1 tsp finely chopped coriander leaves
1 tsp finely chopped grated carrots
1/4 tsp cumin seeds
1/4 tsp cumin powder
1/4 tsp turmeric powder
pinch of black pepper powder
1 tsp ghee
salt to taste

Method:
1. Finely chop/grate veggies which your baby likes.

 2. Add cereals with some water and mix well to remove lumps.

3. Heat a pan and add ghee.Then add cumin seeds.
4. Then add cereal mix,remaining water and veggies to pan.Add salt,black pepper,turmeric and cumin powder.Mix everything.

5. Cook for 5 to 10 min until cereals and veggies are softer. Quick khichdi is ready for your little one.

Homemade Daal, rice cereal for your little one

When it comes to baby,I don't trust outside food.I never gave my baby outside cereals and other food.
I started with banana(no need to wash,easy to peel and feed anywhere,anytime). Then slowly I added papaya,apple,pear (boiled and mashed). Tomato soup,vegetable soup,khichdi, rava upma,chapati,tuar and moong daal,idli,Oats veggie pancake, Instant dosa bytes added later.
Below daal,rice cereals you can make in advance and store to use later.



Ingredients:
2 cup rice
1 cup moong daal(Split green gram lentil)
1 tsp ghee




Method:
1. Wash rice and daal twice,drain water and let them dry (I keep them in steel plate for some time until they get dry completely).






2. Heat a pan,add little ghee ,then daal and rice. Roast them on medium/low flame for 3 to 4 min.Stir continuously.

3. Grind them coarsely.
4. Store them in air tight container.


Now use these cereals to make halwa/upma like we do with  roasted sooji/rava. Before cooking mix cereals with cold water to avoid lumps.
You can add sugar/jaggery to make sweet version or spices and veggies to make savory version depending upon what your baby likes most.

Oats Veggie pancake for your little one (Healthy Breakfast recipe)

Healthy, tasty recipe for your little one.I started giving these pancakes to my little one when she was 8 month old with yogurt.
Its an instant recipe.Cut/grate veggies, mix with oats and make pancake, that's it.
When going out you can make them,pack them .So easy to carry and feed your baby.
They are so delicious,I started making for my baby and end up with one more breakfast recipe added to my menu.
Spinach,carrots,beetroot,tomato,paneer,oats,semolina yogurt,all these ingredients make this recipe full of nutrients,vitamins,iron,fiber,protein and more.




Ingredients:
1 cup oats
2 tbsp fine semolina/rava (optional,I love to mix grains)
2 tbsp yogurt/buttermilk
2 tbsp finely chopped spinach
2 tbsp grated carrot
2 tbsp finely chopped tomato
2 tbsp finely chopped coriander leaves
2 tbsp grated Paneer/cheese (optional)
Salt as per taste
1 tsp cumin powder
1 tsp turmeric powder
1 tsp black pepper powder
2 tsp ghee
Milk/water as needed to make batter


Method:
1. Mix oats,semolina, yogurt and water (little at a time) to make batter and keep aside.
Here I used quick oats.You can also use instant/old fashioned oats.
 2. Finely chop spinach,coriander leaves and tomato.Grate carrot,beetroot, paneer. My baby loves tomato so I make sure to add tomato.Add veggies of your kid's choice ,easy to feed them.
3. Mix veggies and spices in batter. Consistency should be thick (like pancake /uttapam batter).Add more water/milk if required.
 4. Heat a non-stick pan on medium heat. Grease with ghee/oil.
5. Once pan is hot ,pour batter on it.With spoon spread batter in circular motion.
 5. Cook for 2 to 3 min then turn it over and cook for other side too until it turns light brown in color.Apply some ghee/oil while cooking.
6. Enjoy this with yogurt/chutney/sauce.
